Built deep underground the Metro Arts Theatre of Brisbane, Exhibition is an intimate 24 seat restaurant that will provide guests with a rare multi-sensory dining experience. In the truest sense of escapism, Exhibition will continue the legacy of live theatrical displays, visual arts and performance that will live on forever in this 130-year-old building. We aim to bring you a menu that takes inspiration from a Japanese style omakase. Simply meaning, the chef will choose what’s being served each evening for our 24 guests. Exhibition will take diners on a truly unique experience — expect to see custom handmade cutlery, ceramics from local and Japanese artists, cooking artifacts and our team’s own unique skills and knowledge on display. Our goal is to share the story of all the creators, producers, artists and craftsmen that have contributed to this Exhibition.

Head chef and owner Tim Scott, along with his team, will challenge themselves to bring you unique dishes featuring some of the best producers locally and from across Australia. Using traditional and modern techniques with flavours drawn from many cuisines, the menu will constantly evolve with the seasons. Exhibition’s unparalleled access to premium meat and live seafood means a truly unique dining experience. With the aroma of charcoal smoke, these will be prepared in unexpected ways whilst staying true to the ethos of simplicity and sustainability.

Co-Owner Michael Nguyen of Thai Hoa Grocer has spent a decade collaborating with the most progressive growers in our community. Sustainable ethics and nutrition are at the forefront of his business focus. Working with growers from the volcanic soils of Northern NSW to tropical Far North Queensland gives Exhibition unrivalled access to the very best produce each season.

Exhibition’s beverage list seeks out the best, too, without hemming to New or Old World. It reflects those with a similar vision and purpose of quality and sustainability.
